Mekitsa: crispy and fluffy pastry breakfast
Mekitsas are another part of Bulgarian cuisine, which reminds me of my childhood. Lovely days when my grandma and my mom used to cook for me and to wake me up with the smell of this delicious pastry. You can eat it with everything you have in your fridge, from cheese, bacon, salami to fruit jams, chocolate, and honey. When you see it on your table, you just can't resist tasting a bit of them.
However, cooking this crispy and fluffy mekitsas with lots of love and some hours spent in the kitchen over the hob, not always will end up what we imagined. There are two scenarios that this meal can become, either hard and thick or soft and loose. After a few bad attempts of cooking it and throwing in the bin, I realized there an easy way to prepare it, just buy a ready-made dough for pizza. The most important parts of preparing this dish are dough and frying. If you follow the steps below for preparing mekitsas, you will serve in the end slightly crunchy outside and inside-fluffy.
Preparations:
First of all, go to the supermarket and buy ready-made dough for pizza, oil and some side products for the ready mekitsas. Easy-pissy now your products are in the kitchen lets start cooking.
Cooking:
By buying the ready dough, you skipped a few hours of making and waiting. now you are half-way there. Now take a big tray, put a little bit of flour and oil your hands. Take the big dough ball and start making little balls in size like a nut.

Take a pan with oil inside and put it on the stove. Stretch each ball to become thin, but not transparent. Fried them on both sides until golden brown. In the end you should have at least 20 Mekitsas and you will cook around 40 minutes.
