Milk with rice: dessert

When we think about rice, in our minds comes up dishes like chicken with rice, veggies with rice or leek with rice. have you considered until now a dessert with rice, not salty but with sugar? Milk with rice has been long established in Bulgarian cuisine as well as cream caramel (see in my next blog ).  The cooking time is 35 minutes and you can make 6 servings. Ingredients: milk- 1 liter rice - 2 coffee cups water 2 cups of tea vanilla extract - 1 piece  cinnamon - 1 teaspoon  sugar - 1 cup of tea Instructions:  Wash the rice. Put it in a pan with the water to boil. The rice is ready when soaks the water and gets softer Add the milk to the rice. Stir constantly until the rice is fully cooked.  Remove the pan from the hotplate and add the sugar. Put it back there ad the vanilla after 3 minutes remove it and switched off the heating.  While it is hot distribute it in cups or bowls.  Sprinkle a little bit of cinnamon after 15 minutes.  Ready to serve the

Meatloaf Stefanie: Main dish with mince and veggies

Before telling you more about this main dish, I would like to share some interesting facts: This recipe exists from the 5th century, probably from Roman gourmets It is spread to the European nations and almost every country has own variations In Denmark, it is called mince roll "fake rabbit" and it is wrapped with bacon The meatloaf Stefanie is a classic delicious recipe and suitable for more guests. The roll is easy and fast to cook, unfortunately, it needs to be garnish with mashed potatoes or a seasoned salad. Moussaka: Bulgarian lasagna

Moussaka also called Bulgarian or Greek lasagna is a beloved dish in the Balkans. Again we have something in common with Greek cuisine. This meal is based on potatoes and ground meat. It is delicious when you add some Bulgarian seasoning and you served it warm.  Moussaka is one of the top Bulgarian dishes as well as  Banitsa ,  Mekitsa  and  Tarator . The top layer is very common in our cuisine, it consists of eggs and yogurt. This part of the dish gives the unique taste which you can't find anywhere else in the world. As I mentioned above it is similar to the Greeks Moussaka, but they made it with eggplant whereas we, the Bulgarians are making it with potatoes. Greek Moussaka  The preparation time is around 90 minutes. The recipe below is for 4 servings. Tarator: cold light,fresh and delicious soup

Tarator In the hot summer days, this cold fresh soup fits perfectly with your daily meals. It's healthy and easy to make. Basically, this is a soup with yogurt, cucumber, dill, garlic, and cold water. the best thing is that it is not a cooking soup, just cut and scramble. This dish is similar to the Greek salad Tzatziki.   Tzatziki The preparation time is only 15 minutes. The recipe is for 4 servings. Ingredients 1 cucumber  2 garlic clove 1/2 spoon- salt 1 spoon- (olive) olive 3 spoon - fresh dill 3 cups - yogurt 3 cups - cold water Instructions Peeled and diced the cucumber and the garlic. In a large deep bowl put the cucumber, garlic, salt, oil, and dill Add yogurt and stir to combine. Add some water and mix well until there are no lumps from the yogurt.  The soup is ready, preferably put the soup in the fridge for 30 minutes to be refreshed even more.   ENJOY YOUR MEAL! Mekitsa: crispy and fluffy pastry breakfast

Mekitsas are another part of Bulgarian cuisine, which reminds me of my childhood. Lovely days when my grandma and my mom used to cook for me and to wake me up with the smell of this delicious pastry. You can eat it with everything you have in your fridge, from cheese, bacon, salami to fruit jams, chocolate, and honey. When you see it on your table, you just can't resist tasting a bit of them.  However, cooking this crispy and fluffy mekitsas with lots of love and some hours spent in the kitchen over the hob, not always will end up what we imagined. There are two scenarios that this meal can become, either hard and thick or soft and loose. After a few bad attempts of cooking it and throwing in the bin, I realized there an easy way to prepare it, just buy a ready-made dough for pizza. The most important parts of preparing this dish are dough and frying. If you follow the steps below for preparing mekitsas, you will serve in the end slightly crunchy outside and inside-fluffy.
