Pieces of Bulgarian yummy

Mekitsas are another part of Bulgarian cuisine, which reminds me of my childhood. Lovely days when my grandma and my mom used to cook for me and to wake me up with the smell of this delicious pastry. You can eat it with everything you have in your fridge, from cheese, bacon, salami to fruit jams, chocolate, and honey. When you see it on your table, you just can't resist tasting a bit of them.  However, cooking this crispy and fluffy mekitsas with lots of love and some hours spent in the kitchen over the hob, not always will end up what we imagined. There are two scenarios that this meal can become, either hard and thick or soft and loose. After a few bad attempts of cooking it and throwing in the bin, I realized there an easy way to prepare it, just buy a ready-made dough for pizza.
